Paula Dempsey

Paula Dempsey, founder of Dempsey Bakery, injured her hip 25 years ago clearing some trees in her yard. She had trouble going up steps and always had a limp and chronic pain. Paula consulted with different doctors through the years and took anti-inflammatory medication to relieve some of the pain, but soon she discovered the medications took a toll on her stomach. Still the pain continued.

At the time her husband had been diagnosed with gluten intolerance. In 2007, she began cooking gluten-free at home and without noticing, followed a mostly gluten free diet as well. Amazingly, one day in 2009 while walking with her husband, Paula noticed that her hip was no longer bothering her, and that she actually had not been in any pain for a while.

She then decided to be tested and soon discovered that she, too, was gluten intolerant, like many of her immediate family members. Paula has been eating gluten-free since then, and today experiences no hip pain.
