Jacob Dempsey

Jacob Dempsey, grandson of Paula and Demp, struggled with eating and weight gain since his birth. In addition to stomach pains, he suffered from eczema, with continual itching and redness. Initial allergy testing revealed that Jacob was severely allergic to nuts. Additional testing indicated allergies to soy, dairy and eggs, along with gluten intolerance.

Jacob has been gluten-free and off of all the foods that cause his allergies for almost three years. His weight is slowly increasing, but today Jacob rarely complains about his stomach and his eczema is almost non-existent. His family never imagined it would be such a blessing to hear him ask, “What’s for dinner? I’m starving!”
