I hope everyone is noticing the food trends in mainstream food products. My bakery makes and packages a product for a company called “The Crispery” which is a gooey rice krispie treat in the GF version. We have been doing it less than a year and have witnessed firsthand the simple changes suppliers are making. First Kelloggs quit making the Gf version of Rice Krispies because they are changing over so that all of their product will be GF and then Kraft changed over their marshmallow recipe, even for bulk options, to have no more dyes and artificial flavors. We are thrilled to death but as a commercial baker, I realize how difficult change over can be. Everyone that uses these products have to change their recipe and labels have to be redesigned, etc. It takes a lot of money and time to get everything up to speed. As you probably know Cheerios are transitioning to all GF as well. The list goes on and on. I keep seeing signs of change in every food marketplace from fast food to cereal and meats. Finally it is more mainstream. I am not sure how things got so out of hand but 50 years or so of eating mainly processed and fast food is finally catching up with our poor health and people have noticed and are willing to make changes and little by little foods will become better and we will change our bad habits.
